Recently, someone challenged me to create a parfait that was dairy-free, full of vegan goodness yet still smooth and refreshing. I will be honest with you, I had to remind myself what exactly constitutes a parfait and why I am not eating any. Then I realized … in the past, while everyone was enjoying perfectly chilled yogurt parfaits, I was getting stomach cramps from the dairy and feeling quite unhealthy after all the sugar. But not anymore 🙂
My version of the perfect parfait is vegan and gluten-free, loaded with tons of goodness (my lovely sister Maggie ♥︎ from CitrineCo.com has also contributed to the creation of this yummy recipe!). I soaked chia seeds overnight in coconut milk mixed with a mashed banana. In the morning, the mixture had a gel-like consistency. With the addition of an avocado, tablespoon of maple syrup and water, blended in the Vitamix and BINGO! I created the rich and velvety texture of a cool parfait.

This delicious and creamy recipe couldn’t be easier. The night before just mash up a banana with a quarter cup of chia seeds and add a cup of coconut milk and some vanilla extract. Cover and leave overnight to soak. By soaking the chia seeds, their nutrients become more readily available, making them easier to digest and easier to absorb and be assimilated by the body.
Originally grown in Mexico, chia was known as “The Runners’ Seed” because warriors used them as fuel while running long distances or during battles.
Heads Up Runners! Consuming chia seeds enhances exercise performance, increases metabolism and provides more hydration to your body. It can also burn belly fat as well.
Back to the recipe; transfer the soaked chia seed mixture to a blender and add one avocado, maple syrup and a little bit of water. Give it a whirl and now you are ready to layer the parfait.
No breakfast parfait is finished without some granola. If you have the time and ambition you can make your own but we quite enjoy Hippie Granola by Hippie Foods. Add some fresh or frozen fruits like blueberries, strawberries, blackberries and kiwis ❋ Walnuts and sunflowers seeds ❋ Sprinkle some shredded coconut on top ❋ You can even whip up some coconut milk as a topping.

Chia Powerhouse Parfait
Yield 4 cups
Super easy recipe that is rich in texture and super healthy for you! Enjoy in the morning for breakfast and even any time during the day as snack.
- 1/4 cup (32 g) chia seeds
- 1 cup (128 g) coconut milk
- 1 banana
- 1 avocado
- 1 tbsp (15 g) maple syrup
- 2 tbsp (30 g) water
- 2 tsp (10.5 g) vanilla extract
- In a large glass container combine mashed banana with a quarter cup of chia seeds and a cup of coconut milk. Add vanilla extract or finally grated orange zest.
- Close and refrigerate (at least 4 hours or preferably overnight) until thick.
- After soaking, stir the mixture and put into blender. Add an avocado, two tablespoons of water and one tablespoon of maple syrup. Blend until smooth.
- Layer your parfait with granola, fresh fruit and top off with some walnuts and sunflower seeds and a sprinkle of shredded coconut.
You can also make dairy-free whipped cream from full fat coconut milk as a great topping
