You will need these:
1 cup (128 g) gluten-free rolled oats
1/2 cup (64 g) soaked walnuts
1/2 cup (64 g) soaked pecans
1/4 cup (32 g) raw shelled hemp seeds
1 cup (128 g) dates
1/3 cup (78 g) cacao powder
2 Tbsp (28.3 g) coconut oil
1 tsp (5 g) vanilla
1/4 tsp (1.25 g) Himalayan salt or sea salt
3 Tbsp (45 g) water (add more if too dry)
2 Tbsp (30 g) coconut oil
2 Tbsp (30 g) maple syrup
1 tsp (15 g) vanilla extract
1/3 cup (78 g) unsweetened shredded coconut flakes
It is done like so:
First, add the oats alone to the food processor and grind.
Then, add the walnuts, pecans and hemp seeds and grind some more.
Now, add the remaining dough ingredients to the food processor and grind until all ingredients turn into a moist dough/ball. If the dough is too dry you can add another tsp of water until it rolls into a dough.
Start to roll the timbit balls and lay them out on a piece of parchment paper or a large plate.
Put the plate of timbit balls in the fridge or freezer while making the glaze 5-10min.
To make the glaze, melt the coconut oil on low heat then add maple syrup and the vanilla extract.
Turn off the stove and start to whisk until you get a soft caramelly consistency.
Put the unsweetened shredded coconut flakes in a bowl.
Dip the timbit balls in the glaze and then roll them in the coconut topping.
You can put them in the fridge in a sealed glass container for up to a week or freeze them.
